CHISO-Nishi Kenichi

A restaurant relocated from Hiroshima to Yaizu, Shizuoka. It is one of the few restaurants that handle fish prepared by Naoki Maeda, the fifth-generation owner of “Sasue Maeda Fish Store,” which has been in business for over 60 years. The restaurant blends French cuisine with Japanese elements in an innovative style, transforming an old Japanese house to incorporate an interior that evokes the feeling of being underwater.

The dining area consists of only an eight-seat counter made from a single slab of cypress wood. The open kitchen is designed to eliminate the typical kitchen atmosphere, allowing guests to focus entirely on the cooking process and experience an extraordinary dining ambiance. The back wall of the kitchen features a world map drawn with mortar, symbolizing the vastness of the world’s oceans.
